CRISPY SQUASH
I mean who doesn't love a crispy fried ANYTHING. But for me, this is just an example that showcases the power of vegetables - something that eats like a meal but is super simple to make, has the range of Gary Oldman and can be used with so many types of squash. CRISPY SQUASH FOR POTUS: the easy vegetable recipe that we deserve.
RECIPE
1 squash, seeded, peeled & cut in half
2+ cups of panko (normally im a "use what you got" kind of person, but the quality of panko has really shown to have an impact on the recipe)
1 cup of AP flour
1 cup of egg replacer (or two eggs broken and beaten)
3 cups of an oil of your choice
1. in a pot of seasoned boiling water, blanche the squash until tender (3-6 minutes) - if you can stick a fork in it then you're good. Bear in mind, you will need to cover this in flour, eggs & panko.
2. remove squash from the water, place on a small baking sheet and cool. This will make handling it and moving it around easier. make three separate bowls (each wide enough to hold squash): one with flour, one with egg (or egg like substance) & one with panko. Coat the squash in flour, then egg, then panko - be sure to cover each corner and crevice of it
3. place a pot of oil on medium heat until it reaches 350f (FOR THE LOVE OF ALL THINGS GOOD IN THE WORLD PLEASE LEARN ABOUT FIRE SAFETY AND PROPERLY USING AN EXTINGUISHER + OIL FIRE SAFETY BEFORE TRYING THIS RECIPE).
4. Ok, sorry for yelling but fire safety is important and we need to all agree on it's importance. gently and calmly place the squash into the oil. Flip after 3 minutes (or until the panko is golden) to ensure even cooking.
5. remove from your oil and repeat with second piece. place on rack and salt generously.
6. dress it up how you like and get crazy (but not so crazy that you forget about fire safety!).
