white bean + cauliflower dip

honestly, im in DEEP with the dips. I just think it's something that fits every occasion. you kind of get to choose your own adventure with this, or more accurately - your vessel. it's packed with protein, in no way shy on flavours and is a really delicious swiss-army-knife-food. When I dip, you dip, WE DIP BB. throw some nori on this, a couple roasted red pepper and get into it. the sun is shining and it's time to bring that feeling directly onto your tastebuds.
ingredients
1 can of white beans
1/2 head of cauliflower, cut into thumb-sized pieces (very technical)
2 tablespoons of cider vinegar
1 bunch of leek
4 cloves of garlic
2 sheets of nori
1 lemon
1 red pepper, roasted, peeled + diced
cooking oil of sorts
salt and pepper
1. in an oiled skillet, on medium heat, add in your leeks and garlic. add salt and a squeeze of lemon juice. cook until translucent and aromatic.
2. add in cauliflower florets and turn heat up to about a 7. add salt and lemon zest. Let florets sear on one side - try not to move the pan enough, we want that caramelization.
3. once florets are tender (they should almost taste nutty from searing them), add them into a blender along with cider vinegar, your white beans and your leek/garlic combo. blend on high until smooth. add water (or oil) for desired consistency.
4. garnish with diced roasted red pepper, torn nori + some extra lemon zest.
