Tomato & Berry Salad (aka a "Fruit Salad")

This is kind of a perfect tomato salad IMO - the UMPH of the tomatoes, the sweetness of some berries contrasting with the sourness of others, the almost-too-much-olive-oil on top and the heavy salad. I add a chopped salsa verde on top because "hell yes" and some fresh cracked pep - there you go, the perfect tomato salad. 

RECIPE

2 bright juicy tomatoes

1 handful of some blueberries

1 handful of strawberries, sliced

1 handful of raspberries

1/2 cup of parsley

1/2 cup of basil

1/4 cup of tarragon

1/4 cup of mint (or cilantro if you think thats weird)

1 lemon

2 cloves of garlic, minced

2 tablespoons of chopped capers

olive oil

 

1. slice the tomatoes and season well with salt and pepper. Let them pour their cute guts out to you and purge some of that water. set them aside while you do the rest.

2. for the salsa verde, put aside a few of each herb for garnish then fine chop the rest up. Add to a mixing bowl and add you capers, garlic & lemon zest. Add salt and pepper and olive oil and mix until desired consistency. add lemon juice just as you go to serve.

3. place your tomatoes on a plate spread out. top with your salsa verde, followed by your berries, then some flaked salt and picked herbs. 

4. slice up some thick AF bread, grill that and share with your friends (they put up with you and deserve so much more)
